McGriddle sausage muffins

I made an Instagram recipe for a McGriddle sausage cake, but modified it to be muffins. I recommend making these in silicone muffin cases, or greasing the muffin cases really well, they stuck hard to paper muffin cases. I used a Mexican cheese blend and it worked well. Going to add a couple of tablespoons of oats for the second batch.

Ingredients

  • 1 cup of flour (try wheat flour)
  • 1 tbsp baking powder
  • 2 eggs, beaten
  • 1/2 cup of cottage cheese
  • 1/3 cup of maple syrup
  • 3/4 cup of milk
  • 1 cup of shredded cheese
  • 1/2lb ground breakfast sausage

Preheat the oven to 375f

Cook the sausage, breaking into small pieces. Set aside

In a large mixing bowl, combine flour, baking powder, milk, cottage cheese, and maple syrup.

Fold in the sausage and grated cheese. Spoon into silicone muffin cases and cook for 20 minutes, until slightly browned and a toothpick comes out clean.

Serve with maple syrup for garnish.
