Scone recipe, no sourdough

Feral, the sourdough starter, has gone mouldy. Feral is no more.  Feral-Two will be created at some point, but in the mean time, I needed a non-sourdough scone recipe and King Arthur provided one.

Since I'm unable to bake a recipe as written, I made a few tweaks:

  • Flour: 2 cups einkorn wheat, 3/4 cups millet
  • Add 2 tbsp coffee flour
  • Add 1 tsp Chinese 5 spice
  • Top with maple sugar
  • Use duck eggs if you have them (yay farmer's market!)
Round scones on a Silpat sheet, fresh out of the oven.

There is always a prime number of scones, and always either one teeny runty scone, or one ginormous mega-scone. This batch was 12 plus a runty one.
